Dance like a Leprechaun: Getting Kids to Move!

Climbing tress, riding bikes, hop scotch, and monkey bars were all things that I loved to do on a daily basis as a child. I am afraid many of these things are being replaced with electronic devices and our children are not moving enough!

Kids are not moving enough

According to research, the amount of physical activity since the turn of the century has declined 75%! SEVENTY FIVE PERCENT people!!! Our kids are not playing the way we used to and therefore, not moving like we used to. I wanted to find out more and contacted Katie Kendrick, an Adaptive Physical Education Teacher in New York and she reported that an unhealthy diet is not the only culprit in the rise of obesity in the United States, but that the lack of physical activity is just as much to blame. Kendrick recommends that parents take the initiative and be active along side their children. If they participate in physical activity with their kids their kids will be more likely to incorporate it  in their lifestyle as adults. Not to mention the great bonding opportunity it can have!

But how do we move and run around when the weather is so cold still in many areas? Katie shared with me an idea. She recommended using a video camera to record  silly dances or movement performances and then later watch it with your child. That way this generation of technology lovers can move AND  also engage in screen time!

 I got to thinking with St. Patty’s day just around the corner… we should DANCE like a leprechaun and record it for us to watch!!

Leprechaun Song

So, I asked Bee to come back and share with us her Leprechaun Song… but wait not so fast… first you MUST dress each other up like leprechauns. This makes for a great bonding moment with your child! Let them have control over what you wear!

Warning: Sticky leprechaun eyebrows and sideburns ^ may or may not serve as a waxing strip followed by crying children.

Don’t be afraid to be silly and wear whatever your child wants you to wear! Make it fun!

Easy DIY Gold Foil Prints

Easy DIY Gold Foil Prints

Gold foil prints are in and they are easier to create than I could have imagined. You only need three things to complete this simple project: A laser print, toner reactive foil and a laminator.

First, create your black and white graphic (or download our lucky shamrock) and print on a laser printer (which uses toner). We have an ink jet printer so I sent the file to my local print shop (Kinkos, Staples) and spent 14¢ to have it printed on card stock. Little tip – save yourself another trip and print 2 or 3 just in case you mess up!)

Make sure your print is free from any dust or fibers (it will make it so the foil doesn’t stick in those areas.) Carefully roll out your toner reactive foil to completely cover your black and white image, gold side up.

Place a piece of plain printer paper over the top and carefully send it through your laminator. In order for this to work properly, the foil must get hot enough to bind to the black toner. I originally sent it through the laminator with card stock over the top and it didn’t work. My laminator also came with a laminating envelope which was too thick as well for the foil to get hot enough.

Once it comes out of the laminator and cools, you’ll see how the gold is stuck to the toner.

The only thing left to do is slowly pull the gold foil back and you’re done.

Easy No Bake Lime Cheesecake Squares

If you’re looking for an easy and delicious way to treat the family this St. Patrick’s Day – you’ll love these easy no bake lime cheesecake squares! Not too sweet, with a delicate crumb crust and that beautiful shamrock green, these are the perfect addition to your St. Patrick’s Day meal!

 

*Just a quick note before we get started: These squares need to chill for a few hours before serving, so be sure to plan ahead and get these prepped with plenty of time!

Here’s what you’ll need to get these babies whipped up:

Ingredients:

• 1/2 cup graham cracker crumbs (can use gluten-free variety as well)
• 2 Tbsp butter or hard margarine, melted
• 1 tsp sugar
• 1 pkg lime-flavored gelatin (the 4oz size)
• 3/4 cups boiling water
• 1.5 cups cottage cheese
• 1 block cream cheese, softened (8 oz size)
• 3 cups cool whip

To make the crust:

Line your container with parchment paper. This makes for easier removal of the squares.Use an 8X8 square pan, or a 2 quart baking pan of some sort. I have this smaller rectangular pan so I used that.

In a small bowl, combine the graham cracker crumbs, sugar, and melted butter. Press into your parchment-lined pan. Pop the crust in the fridge while you start to prepare the filling.

For the Filling:

In a large bowl, dissolve the gelatin powder in the boiling water. Set it aside.

In your blender or a food processor, blend the cottage cheese and cream cheese until very smooth. Remember to scrape down the edges a few times to be sure you get it all well blended.

Stir about 1/2 cup of the cream cheese mixture into the gelatin mixture until it is smooth. Then add the remaining cream cheese mixture in, stirring well. Finally, fold in the Cool Whip.

Spread the mixture on top of the chilled cookie crumb crust and then refrigerate the entire pan until the filling sets up. It takes anywhere from 4-8 hours.

Once the squares have been chilled well, you can cut them into squares and serve!

You guys, these squares are SO creamy, light, and delicious. I love to garnish with a dollop of left over Cool Whip and some lime zest – I mean, it just looks pretty!

This recipe would also be delicious with a variety of other gelatin flavors! Let me know what you think and which flavors you’re going to try!
