Let’s Make Some Pizza . . . SOUP!
Dinner time is looming and you haven’t thought of what to make. You could:
- Order pizza – again, or
- Make delicious Pizza Soup!
This pizza soup is so easy, tastes amazing, and is customizable to your family’s preferences. You probably have everything you need to make this easy pizza soup already in your fridge and pantry, and the best part is, no simmering for hours to get a scrumptious soup!
Here is what you’ll need:
- 1 Tbsp Olive Oil
- 1/2 Cup diced onion
- 1/2 Cup sliced mushroom
- 1 cup (more or less) pepperoni slices
- 1/2 tsp dried basil (or 1 Tbsp fresh, sliced)
- 1 clove garlic, minced
- 1/3 cup green bell pepper, diced
- 1 large can Italian Seasoned Diced Tomatoes
- 1 cup beef broth
- Salt & pepper, to taste
- 1 cup shredded mozzarella cheese (optional)
- Sliced french or sourdough bread (optional)
What if I hate Mushrooms/Green Peppers/Pepperoni?
First of all, I don’t think we can be friends. Okay, just kidding – I won’t judge you based on your pizza topping preferences. I’m sure there is something very loveable about you in other ways. Feel free to swap out any of the above listed ingredients with your favorites, or just omit whatever you don’t like. Here are a few other add in options for your pizza soup (and no, I’m not listing pineapple. I’m not a monster.)
- Bacon (cooked and crumbled)
- Ham or Canadian Bacon
- Italian Sausage (cooked and crumbled)
- Olives
- Grilled chicken, (cooked and diced)
- Salami
- Pancetta
- Avocado
Okay, Let’s Get Cooking!
- In a stock pot, saute the garlic, onion, green pepper and mushrooms in the olive oil for 3-5 minutes or until tender.
- Add the can of tomatoes (with juice), broth, pepperoni and basil and bring to a boil over medium-high heat.
- Reduce the heat, cover, and simmer for 10-15 minutes to allow flavors to blend. Season to taste with salt and pepper, though I rarely ever need to.
- You can serve as is, or ladle the soup into oven-safe bowls, add one slice of bread to the top (thicker slices work best), and sprinkle with shredded mozzarella cheese. Broil in the oven until the cheese begins to bubble
- Serve!
